While you would obviously have to provide other means of hydration, it would cut down on some of the mess. Freeze dried fruits do retain most of their nutrients too! Although I wonder if roaches might benefit from consuming the bacteria and other microbes that colonize fresh fruit as it just starts to decompose in the 24-48 hour period it's in the enclosure. I don't really know though and it's probably not really that big of a difference. Personally I would probably stick to fresh fruit since you wouldn't have to thaw it out and it might be cheaper.
