Does it affect the shape of roach wings when they molt?

Humidity usually has nothing to do with deformed wings. Moisture is important since the wings are expanded using body fluids but it's an issue of hydration rather than ambient humidity. The most common reasons for bad wings (in order) are: lack of proper molting surfaces, overcrowding and poor health.
